Chicken Stew Recipe
Here is a recipe for a sautéed chicken, simmered in cognac with juniper berries. The chicken comes out moist and flavorful, a bit spicy and woody thanks to juniper berries, which are traditionally used for pickling.
Ingredients: Chicken Stew with Cognac and Juniper Berries
4 people:
- 1 chicken
- 3 red onions
- 1 clove garlic
- 1 tablespoon juniper berries
- 7 fl oz (20 cl) of white wine
- 10 fl oz (30 cl) of cognac
- Oil
- Salt and pepper.
Cooking Instructions
Ask your poulterer to cut the chicken into pieces or buy a whole chicken and do it by yourself.
In a large pot, heat a little oil and brown the chicken pieces. Add the onions, peeled and sliced, then add garlic. Let sweat for 10 minutes, until onions become shiny but not brown. Add the juniper berries and salt. Add the Cognac and bring to a boil. Then add the white wine.
Cook over low heat for 30 minutes. Remove from heat, let cool and place in the refrigerator to marinate overnight, until the chicken get this specific flavor. The next day, cook 15 minutes over low heat to warm up before serving.
My advice:
Accompany this chicken stew with mashed carrots, broccoli or potatoes.

This is INSANELY DELICIOUS, Chicken stew has been in our family for as long as I can remember (which sometimes it further back than yesterday). I added a bunch of crushed red pepper for spice and swapped 10 fl oz (30 cl) of cognac for a 6 fl oz (30 cl) of cognac

your Chicken Stew recipe brings back great memories. I love the chunky type of stew where I can see what I am eating instead of a mashed up soup. Beautiful colour in your stew.
