- Potatoes
- Smoked salmon
- Sour cream
- Chives and garlic
- Salt, pepper, Sichuan peppercorns, and pine nuts
How to bake the potatoes in foil
- Bake potatoes – Wrap in foil and bake at 360°F (180°C) for 1 hour, until tender.
- Prepare the toppings – Mix sour cream with chives, garlic, salt, pepper, and crushed Sichuan peppercorns. Toast pine nuts in a dry skillet.
- Assemble and serve – Halve potatoes, top with cream mixture, smoked salmon strips, and toasted pine nuts. Serve immediately.

Baked Potatoes in Foil with Smoked Salmon

Try these baked potatoes with smoked salmon and a creamy topping–they're perfect for a no-fuss dinner and everyone will ask for more!
Ingredients
- 4 large potatoes
- 2 tablespoons thick sour cream
- 2 tablespoons chopped chives
- 1 clove of garlic
- 4 slices of smoked salmon
- Salt and pepper
- 5 Seychuan peppercorns
- 2 tablespoons pine nuts
Instructions
- Preheat your oven to 360°f (180°c) and wrap each potato in a 8 by 8 inch foil square.
- Bake the potatoes for 1 hour. Prick with a knife to check doneness.
- In the meantime, mix cream, chives, chopped garlic clove. Season with salt and pepper.
- Crush the pink Sichuan peppercorns with a pestle. Add to the cream mixture.
- Dry toast the pine nuts in skillet (no oil).
- Cut the potatoes in half.
- Add the cream and smoked salmon strips.
- Finish by topping with pine nuts, more chopped chives and serve immediately. Enjoy!
