Ingredients for the Peppers Omelette
For 4 persons
- 8 eggs
- 100 g of 0% fat cottage cheese
- 2 tomatoes
- 1 red pepper, or two halves of red and yellow peppers
- 50 g grated Parmesan cheese
- 1 onion
- some basil leaves
- 2 tablespoons olive oil
- Salt & pepper
Preparation for the Peppers Omelette
Boil tomatoes for 30 seconds, peel and seed them.
Wash peppers and cut them into small dices. Peel the onion and chop it finely.
Mix eggs, cottage cheese, Parmesan, salt and pepper. Beat in the omelet bowl.
In a non-stick pan, fry the pepper, tomatoes, onion and basil with a little olive oil.
Then add the omelette and, it must remain moist in the center.
