- 8 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- Kosher salt and freshly ground black pepper, to taste
- 1 garlic head (8 to 10 cloves garlic, unpeeled)
- 1 onion, minced
- 2 tomatoes, diced
- 1/2 cup (120ml) chicken broth
- 1 tablespoon dried thyme
