- 12 oz (340g) cream cheese, softened to room temperature
- 1 cup whipping cream
- 1/2 cup peanut butter
- Natural sweetener (Stevia, Swerve…or sugar for non-keto), to taste
- 1 teaspoon of vanilla extract
- 2 tablespoons crushed peanuts

Directions
1. To make the peanut butter cheesecake mousse: In a large bowl using a hand mixer, whip cream cheese, whipped cream, peanut butter, natural sweetener, and vanilla extract until combined. Continue beating for a couple of minutes, until the mousse is light and fluffy.
2. Spoon the cream cheese mixture into dessert cups and flatten using the back of the spoon.
3. Using crushed peanuts, garnish the top of the peanut butter cheesecake mousse. Place in the refrigerator for 45 minutes and serve until thickened, 1 hour up to overnight – until ready to serve. Enjoy!
