Carrots are available all year long at your grocery store. The first step in learning to cook carrots in the oven, on the stovetop, or in the slow cooker is knowing how to prep them. For four servings of carrots, you can count on one pound (450g) of fresh carrots.

  • Make sure to wash carrots thoroughly under cool running water. Use a soft brush to remove any dirt that has stuck to the root.
  • When ready to cook, peel or scrub the carrots and trim the stem and root end. Some recipes call for cooking carrots whole; you can keep some of the stems for a pretty presentation. In this case, cut stems to 1 inch and wash thoroughly.
  • If you’re wondering how to cook carrots fast, start with packaged peeled baby-cut carrots. There’s no prep needed!

How to Prepare Carrots for Cooking

Another way to prep carrots in advance is to blanch them:

  • Boil carrots (peeled or unpeeled) in salted water for 2 minutes.
  • Soak into an ice bath to stop the cooking process
  • Pat dry and store in a container in your refrigerator until ready to cook.

The pre-cooked carrots can then be used in your stir-fries, roasted with other veggies, etc.
