Directions

1. To make the chocolate chips skillet cookie: Preheat your oven to 350ºF (180ºC) and start preparing the brown butter. Heat a small saucepan on medium heat, and add the diced butter, making sure to whisk frequently with a wooden spoon to prevent the butter from burning. The melted butter should start to foam up a little bit, and then separate. Watch the butter carefully as lightly browned specks begin to form at the bottom of the pan.

2. Once the butter has colored and has a fragrant nutty aroma, remove from heat and place on a cool surface like a bowl full of cold water to help stop the butter from cooking further. Filter through a fine-mesh strainer to discard the lactose and keep only the clarified butter (also known as ghee). If you don’t have a strainer fine enough, just skim the surface with a spoon to remove the lactose. Set aside to cool for a while.

3. When the brown butter has cooled down, mix butter and sugar in a large bowl with a wooden spoon. Stir in egg and vanilla, then flour, cocoa, baking soda, and salt. Finally, stir chocolate chips in the cookie batter.

4. Transfer the cookie batter to a 10-inch ovenproof nonstick skillet (cast-iron preferably); smooth the top with a spatula. Bake the giant cookie in the preheated oven until just set in the center and pulling away from sides, 20 to 22 minutes.

5. Let cool the skillet cookie 10 minutes; loosen the edges of the cookie. Delicately turn the cookie out onto a wire rack. Reinvert onto a plate, slice, and serve the chocolate chips skillet cookie with scoops of vanilla ice cream or/and drizzle with caramel sauce. Enjoy!
