Cauliflower salad recipe

Cauliflower salad with bacon and cheddar is similar to tabbouleh in texture: the fine cauliflower grind is an amazing vehicle for crispy bacon bits, creamy cheddar, and herbs. The salad makes a great low-carb and gluten-free meal, and you can customize it with additional protein, like roast chicken.

How to make bacon cauliflower salad:

1. Grate cauliflower using a box grater or food processor.

2. Transfer the grated cauliflower in a large salad bowl and season with salt and pepper. Mix to combine and set aside.

3. Add the remaining ingredients—crispy bacon, shredded cheddar, parsley, red onion, and red bell pepper—on top of the grated cauliflower.

4. Combine olive oil, lemon juice, salt, and pepper in a jar. Shake well, then pour over the salad ingredients. Gently toss to combine the cauliflower salad.

5. Serve the bacon cauliflower salad chilled or at room temperature. Enjoy!

Tips for the bacon cauliflower salad recipe

  • If the cauliflower tastes too strong, steam or microwave it with a little water after it’s been grated. Drain before using in the salad.
  • If you have time, cook and crisp bacon in a skillet, drain from fat, then chop on a cutting board.
  • Go easy on salt because bacon is already salty.
  • You can wear the dress up to 5 days ahead of time.

How to keep the cauliflower salad leftovers
