Everyone loves some good skewers with various meats around a barbecue, especially with our loved ones. So here’s a new way to make your kabobs with colorful flavors of summer. The secret reside in a good marinade, to let the rabbit flesh soak in the aromas.

Ingredients for the Rabbit Skewers

  • 2 lbs (1 kg) of boneless rabbit meat
  • 2 green peppers
  • 1 yellow pepper
  • 1 red pepper
  • 1 orange pepper
  • 1 shallot
  • 1 1/2 cup (30 cl) white wine
  • 1 sprig of thyme
  • 1 Coffee spoon of cracked pepper
  • salt

Directions

Prepare a barbecue.
Cut the rabbit flesh into small cubes. Peel and finely chop the shallot.
Put the rabbit meat in a dish. Sprinkle with the shallots, thyme and cracked pepper. Pour white wine and let marinate 20 minutes.
Meanwhile, wash the peppers, remove seeds and cut them into cubes.
Dip cubes of peppers 5 minutes in boiling water. Drain and set aside.
Drain the rabbit pieces and sew them on your wooden picks, alternating with pepper cubes. Place skewers on rack. Place the grate on the grill and cook about 20 minutes, turning the grill regularly.

Serve immediately after cooking with white rice!

Wine suggestion: a rosé or a red Cotes du Rhône

Tips

With not re-use the marinade for making a good barbecue sauce? Cook the remaining marinade in a pan and make reduce a little bit. Then add 2 or 3 spoon of cream and mix over low heat. Complete the seasoning with salt and pepper and serve in a bowl.
