Lemon Grass Cherry Soup

Ingredients
- 1lb of cherries
- 2 Lemongrass stalks
- 4 tablespoons sugar
- 1/4 teaspoon Fresh cracked black pepper
Instructions
- Remove the dried leaves of the lemongrass and chop the soft parts into pieces. Take 4 pieces and chop them finely.
- Boil 5fl oz (15cl) water with sugar and lemon grass. Let simmer for 5 min then infuse for 15 minutes, covered.
- Filter the syrup using a thin strainer then it pour it over the cherries. Let completely cool and serve with cracked pepper sprinkled on top.
