- 12 oz. (340g) fresh or frozen cantaloupe melon
- 2 teaspoons honey
- 1/4 teaspoon orange zest (optional)
- 1 (750 mL) bottle of Prosecco, chilled
- 6 balls cantaloupe melon, for garnish (optional)

Directions
1. To make the cantaloupe bellini cocktails: If you plan to garnish your Bellinis cocktails with a fancy melon skewer: Trim your bamboo skewers to be about 1 inch longer than the diameter of your cocktail glasses. Scoop out melon balls with a melon baller, thread them onto the skewers, and set them aside.
2. Make the cantaloupe melon puree: Add honey, and melon to your blender and blend until smooth. Taste, and add more honey if necessary. If using frozen melon: Defrost cantaloupe melon on a plate for 1 hour in the refrigerator. Drain excess liquid, transfer to the blender, and proceed as with fresh melon.
3. Refrigerate the cantaloupe melon puree until cold, about 30 minutes. When ready to serve the cantaloupe bellini cocktails, add about 2 tablespoons of melon puree to the bottom of each cocktail glass. Top with Prosecco, garnish with a decorative fruit skewer if you like, and serve. Enjoy! ❤️
