What do we need when we are busy at work or too tired to make something complicated for dinner at home? A fresh pasta salad, of course! So easy and quick to make, you can take it to work or school, or just enjoy it for a weeknight dinner. I’ll let you choose the quantities, depending on how many people you will be serving — and how hungry you are.
Ingredients list for the spring pasta salad
- Pasta of your choice
- Radish
- Diced tomatoes
- Arugula
- Grated parmesan
- Chopped basil
- Balsamic Mustard (or prepare a mix of mustard and balsamic vinegar)
- Salt and pepper
Directions
1. Cook the pasta al dente in a large pot of boiling salted water.
2. Meanwhile, slice the radishes, seed and dice the tomatoes, wash and drain the arugula, and chop the basil.
3. Leave the pasta to cool completely. You can run it under cold water to speed this up. Then drain.
4. Mix all the ingredients with the pasta in a large salad bowl. Serve into individual plates and top with a few arugula leaves. Enjoy!
