Editor: It’s true baked fries are healthier and can taste almost as good as real french fries. So here’s the trick we use all the time: Dip the potato sticks in egg whites whisked with herbs and/or spices before baking. Spread potato sticks on a rimmed baking sheet and coat with a myst of olive oil. Bake at 425 ̊F (220°C) until golden. The egg whites will dry out and make the fries extra crisp — without any excess of fat.
