This yogurt sauce goes well with rice and varieties of seafood and shellfish. It is often chosen to bring freshness to dishes.
Yogurt sauce is easy to prepare and takes only little time to make. It could accompany an entree or a fish dish. You can choose between yogurt sauce, cucumber or lemon. If you’re seeking a spicier sauce to enhance the taste of a dish, you may use turmeric, mustard or Espelette pimento.

The basic recipe of yogurt sauce

This basic yogurt sauce recipe is simple and easy to follow. As it jas a neutral taste, it usually accompanies fish dishes. To succeed you will need: 1 medium onion, 3 natural yoghurt, 1 medium tomato,
2 tablespoon olive oil, salt

Prepare the sauce base
Start by washing the tomatoes, and then peel them after a one minute dive into boiling water. Then cut the tomatoes into cubes and put the juice aside, and then finely chop the onion. Then, pour the yogurt in a large bowl, add salt to taste and whisk until creamy. Leave to stand while you heat the oil in a pan for the onions.

Let the onions “saute” for 3 minutes over a low heat before adding the yogurt, without removing the pan from the heat. Stir constantly with a wooden spoon. Add the curry and cook for 5 minutes over a low heat. It is not necessary that the sauce sticks to the bottom of the pan.

Add the tomato juice and set aside the tomato pieces. Adjust seasoning, leave it for 2 minutes more and then remove from heat. The sauce is ready to be served.

Variations of the yogurt sauce

There are several variations of the yogurt sauce. This is essentially spicy sauce or sour sauce.

The spicy yogurt sauce

For this variant, follow the basic recipe by adding some mustard seeds, curry and half of an Espelette pepper. Saute the mustard seeds and chili at the start of preparation, along with the onions. Then add the yogurt. For this spicy version, we recommend salting the sauce only after cooking so the flavors of the mustard seed and pepper emerge gradually during the cooking process.

The yogurt sauce with lemon

This sauce goes well with cold starters such as seafood, fish and crustaceans. It can also accompany tomatoes and vegetables. For this sauce, you will need: 2 juicy lemons, 1 tablespoon vinegar 2 yogurts, 1 tablespoon mustard, 1 tablespoon finely chopped chives, salt.

Prepare the  yogurt sauce with lemon
Wash the lemons and get the juice and pulp. Pour yogurt into a large bowl; add mustard and vinegar if necessary. Beat with a whisk to get a creamy consistency. Add the lemon juice and the tablespoon of chives. Mix, season to taste and refrigerate for 10 to 15 minutes. Add the lemon pulp for decoration. Serve chilled as an accompaniment.

The cucumber yogurt sauce

For this sauce, start by gathering the necessary ingredients, namely: 1 cucumber, 2 Bulgarian yoghurt, mint leaves,, parsley, salt and pepper.

Prepare cucumber yogurt sauce
Wash and peel the cucumbers before cutting into cubes. Then generously salt the pieces of cucumber and let them drain for 10 minutes in a bowl. Meanwhile, wash the mint leaves and parsley and chop finely. Pour yogurt into a bowl and add the mint and parsley. Mix together until you get a smooth and creamy mixture.
