Bain Marie or double boiler

Heating something over hot water without direct contact with heat. Fill half a pot of water then put a smaller sauce-pan over. Put the ingredients to prepare in the sauce pan to cook them gently while controlling heat. It is the regular technique to make scrambled eggs so they remain moist.
