Here are my tricks to keep their flavor longer:
- Roll each bouquet of fresh herbs in 2 sheets of wet towel paper, then put them in a jar in the refrigerator in the least cold area. Avoid the back wall of the fridge (risk of gel).
- Basil: to preserve basil, it is best to chop or mix it with virgin olive oil. Put the mixture into a jam jar in the fridge.
- Fresh thyme: it keeps for a good week in the refrigerator. After one week it is preferable to dry it and peel it off in a pot.
- Freezing is still a good alternative, especially for herbs like basil, chives, and parsley
Remember that if you want to cook lighter, herbs and spices make dishes tastier without adding fat.
