Beat your egg whites with a pinch of salt. And do it with an electric mixer. The salt helps to tighten te texture of beaten eggs, and the electric mixer is better to perform this action quickly. Also make sure to clean the bowl. If there are any traces of fat for instance, your whites won’t rise at all. And for farm eggs, then place your bowl in the microwave for 30 seconds at maximum power. You just have to put your eggs on a bed of custard to make beautiful floating islands!
