1. Begin by placing the corned beef in a large pot and pouring enough cold water to cover the beef completely.

2. Add the pickling spice packet that may have come with the corned beef, if desired.

3. Bring the water to a boil, then reduce the heat to low and simmer for about 2 1/2 hours or until the corned beef is tender.

4. Add potatoes, carrots, onions and cabbage, if desired. Simmer for an additional 30 minutes or until vegetables are cooked through.

5. Remove the pot from the heat and let the corned beef sit in the hot liquid for about 10 minutes before transferring it to a cutting board to carve.

How to make oven-braised corned beef

1. Place the corned beef in a large roasting pan.

2. In a medium bowl, mix together minced onion, garlic, Worcestershire sauce, beef broth, mustard, brown sugar, cider vinegar, caraway seeds, thyme, pepper, and bay leaf.

6. Allow the corned beef to rest before slicing and serving.

Secrets to Cook Corned Beef

  • Choose the Right Cut: Look for a piece of corned beef with even marbling and firm texture. Brisket is the classic cut for corning, but a point cut or flat cut are also good options.
  • Brine Before Cooking: Make sure to soak your corned beef in cold water for at least 8 hours to draw out the salt and make it more tender.
  • Simmer Low and Slow: Boiling your corned beef quickly will result in a tough, chewy texture. Simmer it low and slow to get a tender, juicy meat.
  • Don’t Overcook: The key to juicy, flavorful corned beef is to cook it just until it reaches an internal temperature of 135–145°F.
  • Let It Rest: Before serving, let your corned beef rest for at least 10 minutes before slicing and serving to let the juices redistribute.
