Directions

1. To make the parmesan cauliflower rice: In a medium skillet, melt 2 tablespoons of butter. Fry the garlic and onion for 1 minute until fragrant — be careful not to burn.

2. Add the riced cauliflower to the skillet and stir to mix everything together well and coat in melted butter. Cook, stirring regularly for 1 minute.

3. Stir in the 2 tablespoons vegetable stock, about half the parsley, and lemon zest (if using). Cook for one minute to reduce juices then add the lemon juice and parmesan cheese.

4. Adjust seasoning as needed. Stir in the remaining parsley. Serve the Parmesan Cauliflower Rice with fresh cracked black pepper, red chili pepper flakes, and more parmesan. Enjoy!

The cauliflower rice recipe is quick and easy to make. Of course, you can buy pre-made cauliflower rice at the store. It is usually sold in steamable or microwavable bags. Frozen cauliflower rice is also an option, but make sure to thaw it in a colander before use, otherwise, it will render a lot of water.

How To Make Cauliflower Rice

If you prefer making your own cauliflower rice, it is quick and simple to make. You can use two methods to make it:

  • Make cauliflower rice using a food processor: it is the quickest method. For making cauliflower rice using a food processor, remove the leaves and cut the head of cauliflower into large chunks, and toss them into the bowl of your favorite food processor. Pulse until the cauliflower is processed into tiny bits.
  • Use a hand grater to make cauliflower rice: simple, fewer utensils to clean up, and still pretty quick. Use a box grater and grate cauliflower florets along the side with the larger holes.

How and how long to keep the cauliflower rice leftovers?

This cauliflower rice recipe keeps for up to 3 days in an airtight container in the fridge. Reheat in a skillet or microwave with a few drops of water to loosen the sauce.
