How to Make Skillet Chicken Thighs in Lemon Garlic Butter Sauce:

1. Use a paper towel to pat the chicken thighs dry. You want to remove excess moisture so the chicken will brown properly.

2. In a small bowl, combine the onion powder, paprika, salt, and pepper. 

3. Rub the chicken thighs generously with the seasoning mixture. Set aside while you prepare green beans.

4.  Arrange the green beans in a microwave-safe dish with 1/2 cup (125ml) water and cook in the microwave for 8-10 minutes, until almost done but still crisp.

5. Heat a large cast iron skillet over medium-low heat and melt 2 tablespoons of butter.

6. Place the seasoned chicken thighs skin side down in the hot skillet and cook, until the skin is crispy about 5-6 minutes, then flip the chicken thighs and cook another 5-6 minutes, until cooked through and a cooking thermometer displays 165°F (75°C). If the chicken browns too quickly, lower the heat. Adjust timing depending on the thickness. Transfer chicken to a plate and set aside.

7. In the same skillet, lower the heat and melt the remaining tablespoon of butter. Add chopped parsley, garlic, hot sauce, red crushed chili pepper flakes, and pre-cooked green beans and cook for 4 to 5 minutes, stirring regularly, until cooked to your liking. Add lemon juice and chicken stock and reduce the sauce for a couple of minutes, until slightly thickened.

8. Push green beans to the side, place the chicken back in the pan with the sauce, and reheat quickly. Adjust seasoning chicken with pepper.

9. Serve the lemon garlic butter chicken thighs warm, garnished with more crushed chili pepper, fresh parsley, and a slice of lemon if you like. Enjoy!

  • Remove chicken thighs from the refrigerator about 15 minutes before cooking to bring them close to room temperature.
  • We use boneless and skinless chicken thighs because they render less fat and cook quicker than bone-in. Plus, it is easier to rub the spice mixture deep into the chicken meat.
  • Season chicken thighs just before cooking to prevent drawing out moisture and drying out the meat. If you want to let it sit longer, omit the salt from the spice mixture, and add it 10 minutes before cooking.

    My husband and I both thought this was awesome. Made exactly as written except I was worried the rub wasn’t enough and doubled it. It was close to being too salty (not but close) because of that so maybe should have not doubled the salt. Chicken definitely takes longer to cook than written but that will be dependent on the size of your pieces. I had one piece fatter than the others and was taking much longer so I took it out and let it finish by itself in the oven and kept moving with the recipe. We liked the spice level but it may be too much for some people. Served with baked potatoes. I bought already prepped green beans that just need to be steamed in the bag (4min), a time saver. I only stir fried the beans with the garlic for a minute because the garlic was starting to burn.

    Highly recommend this recipe! If you’re wanting a quick dinner, don’t use bone-in and skin on chicken. It does take a little while longer to cook but it was what I had on hand.     Just made this today. I used Cayenne Pepper instead of Paprika since I didn't have that on hand. I added mushrooms which was a plus. I didn't do green beans. Instead, I cooked Brussel sprouts separately in the oven (recipe in the eatwell website too). The dish was great and my family cleaned their plates! I'm saving this one for sure :)

    This was very good. I have never had butter chicken before I cannot eat really spicy food and bring able to adjust the spice was wonderful. I used the vegetables I had on hand, mushrooms, onions and I had 2 green beans from my garden so I also the them in.     Very tasty results. However, 5 minutes is long enough in the microwave for the beans, and the chicken probably needs more than 6 minutes per side. I will definitely make this again. I think I will replace the butter with olive oil to make it a bit healthier. I’m sure it won’t be as delicious though.

    This was a great meal prep option. I made this and served over jasmine rice. I added a little heavy cream to sauce mixture to make it a little creamy and it was amazing. Definitely will recommend. For the green beans, I got the ones in the bag that you can pop in the microwave, then I sautéed in the sauce like the instructions said.

    Fast, easy and delicious dish. Love that it's one pan. I added a bit of canola oil with the butter to prevent over browning or burning since butter burns easily. I didn't remove the chicken from the pan but pushed it aside and continued with the recipe and that worked well. Served with mashed potatoes. Be sure to use thighs! I had one chicken breast I cut in half since I wanted to use it up along with two thighs and the thighs turned out more flavorful and tender.

    This was good. The chicken was cooked perfectly. So I was born and raised in the Philippines and I am used to food being seasoned a certain way. I followed every instruction in this recipe but at the end, I made some hainanese ginger sauce to pair with the chicken.     This was very delicious. However, I decided to roast my green beans since I was also making mushrooms with this so I roasted for about 20 minutes and then put in the pan at the end as directed. The sauce was actually really delicious and I wished I had doubled it because it did simmer down a bit especially once I added the green beans. It was a pretty quick and easy recipe and I would make it again, my only complaint is that I had to keep scrolling back-and-forth between the ingredient list to the steps because of all the pictures in between.

    Tasted good but the chicken had no color to it and didn't look like the photos. Recipe said to cook chicken medium/low so I don't get how the chicken in the photos came out so crispy and dark. Maybe next time I will finish under the broiler.

    Threw this together for lunch meal prep for the week. Subbed chicken breast for the thighs, finished the breasts in the oven while I made the sauce. Nice and quick meal.

    This was fantastic! The lemon on the green beans was a new flavor for my family and we couldn't get enough of the "sauce." I loved that it came together quickly in 1 pan. This is going in our regular dinner rotation.

    My husband and all 4 kids (10 and under) LOVED this. I left out the siracha and crushed red pepper so that it wouldn’t be too spicy for my 18m old. The rest of us added crushed red pepper to our individual servings. We also used frozen green beans because this was a last minute recipe find and I didn’t have fresh ones on hand. The recipe was quick and easy but was so visually appealing and delicious that it felt gourmet! We will add this to our regular rotation. Thanks for the great recipe!

    My family really liked this. I doubled the recipe as we have a lot of mouths to feed and only used half the Sriracha with no red pepper flakes as I and my youngest are total wimps but even we enjoyed it! I also did not precook the beans. I just sauteed them for a few minutes with the garlic then added 1/4 the chicken broth and covered them just until they started to soften. Then cooked them in the sauce like normal. My teenage boys even said they were the best green beans they had ever had!

    Good but...First of all, the prep time is WAY off. 10 minutes to prep a pound of green beans, clean and chop 4 cloves of garlic, prepare spice mix, prepare chicken thighs, juice and slice a lemon... It took me at least 30 minutes and I am not a beginner cook. I will probably make this again but I am very happy I started the prep early so we could eat dinner on time. I used half of the sriracha and no chili flakes and the beans were pretty spicey

    Made this this evening and after 6 min on med/low with lid on in a cast iron dutch oven, the chicken was not done at all. Took about 15 min per side. I liked the concept when reading through recipe but will probably not try again (my opionion) sorry.

    This is not an easy 1 skillet prep as written. It certainly could be, however. No need to micowave the beans, just put them in the skillet when the chicken is almost finished.

    I’ve tried many new recipes this year and this was by far my favorite!!! I only had the meat leftover from last night and I just finished up sautéing some zucchini’s with it and the sauce and it is delicious! My tips, be generous with the peppers, lemon and salt! I used dried parsley and it was divine.
