Ready in 25 minutes or less, made with chicken, sun-dried tomatoes, bell pepper, garlic, cream, cream cheese, chicken stock, and Mexican seasoning spices. We guarantee everyone will ask for seconds. This version is made in the electric pressure cooker and is easily adaptable to a regular pot, or even slow cooker.

Directions

1. To prepare this instant Pot creamy chicken soup recipe: Turn your Instant Pot on saute mode. Heat the oil in the bottom of the insert and add the chopped onion and garlic and stir for a couple of minutes. 

2. Add chicken breast, sun-dried tomatoes, bell pepper, oregano, cumin, paprika, chili powder, and chicken stock. Give a quick stir and cover the Instant Pot with the lid. Set the timer for 15 minutes on high pressure. Once the timer beeps, release the pressure by gently moving the valve to “venting.”

3. Remove the chicken breast from the Instant Pot and transfer it to a cutting board. Shred cooked chicken breast with 2 forks then return back into the pot.

4. Stir in cream, cream cheese, and cheddar. Turn the Instant Pot to saute mode to heat up the chicken soup while stirring until the cream and cheese are melted and the soup is smooth. Adjust seasoning with salt and pepper and ladle the chicken soup into bowls and garnish with fresh cilantro. Enjoy!

    Loved it! I definitely like using chipotle chili powder. It gives it a great kick. I add crushed red pepper to my own bowl to make it extra spicy.

    I added both cayenne (tsp) and extra chipotle (1/2tbsp), and some crushed red pepper (by eye, tbh) - i like a spicy soup, and those minor changes made it happen

    I know I’m in the minority here but I’ve made this twice… we just find it very bland. I made it once and was a little disappointed. Found it a year or so later, made it again then remembered we had tried it before. It’s just missing something… probably won’t make it again. It’s ok.

    Excellent recipe, I love it. I made a couple of changes. I live in Central America and sun dried tomato's are very difficult to find so I just used a few fresh tomato's. That and I added teaspoon of Sage, doubled the garlic (fresh), 1 cup corn, 1/4 cup of sliced black olives, cup white wine and 2 cups fresh mushrooms. I cooked everything as directed except for the mushrooms. I shredded the chicken, put back into the pot, added mushrooms and set for 10 min's. After that I added the cream, the cheese and simmered for a couple of hours. Wow, turned out amazing and mi amigo's can't get enough of it!

    Never have I ever tasted a soup like this that is so simple to make. I decided to try spinach like another reviewer and then added some sauteed mushrooms. Everything else followed directions to a t and just fabulous! Definitely making this again soon. Thank you

    This was great! Added spinach and used almond milk instead of cream because that's what we had. We loved it! Will definitely add this to our regular rotation.

    Normally do not leave comments on recipes but this one is worthy. My husband said it’s restaurant quality and I couldn’t agree more. Made a couple additions to our taste but did not change the basic recipe. So easy and so tasty. This will be part of my regular IP rotation. Thank you for a delicious recipe.

    This soup is so delicious. A kid favorite! I love making dishes that the kids go back for seconds or thirds for! However, the listed prep time is 10 minutes?! LOL!! There’s no way…. Maybe if your a professional. Maybe it’s just me, It took me at least 30 minutes to cut the veggies, measure the spices, and shred the chicken. I admit I’m a slower cook in general - I normally double the amount of time for any recipe I make - but I think a 10 minute prep is extra unrealistic. That does stop me from making it, though. It’s a family favorite and great for cold fall days. So, thank you!

    This soup was so yummy. The only thing I did different was that I added potatoes. It was a blend of cheesy potato and chicken. Amazingly hearty and delicious. My husband loved it and I’m waiting for my kids to get back from school to get their verdict, but I’m sure they will love!!!! All in all, I would make this soup again! 😋

    I was looking for a way to use up some poblano peppers and stumbled across this recipe. I used the poblano peppers in place of the red peppers. I also didn't have the sun dried tomatoes so I substituted a can of diced tomatoes. I'm sure that the sun dried tomatoes add a lovely flavor though! The resulting soup was delicious. I cannot stop eating it and will be saving this recipe!

    Omigosh! This is truly one of the best soups I have ever eaten and I am a soup fanatic so that’s saying a lot. I make soup often. I had to convert it to a stovetop recipe but it turned out perfect. My teenage granddaughter loves soup like I do and takes it all the time to school for her lunch. I’m making it for her tomorrow and I know will be her new favorite. Thanks for sharing.

    OMG this was absolutely gorgeous I don’t know how anyone could change or add other ingredients and as for one comment that I read that said it was bland well I’m not sure what recipe you followed but it can’t have been this because this was far from bland. The only thing I did was I only used half a cup of cream and that was because it was creamy enough for me with the two cheeses in it and i added more cayenne pepper as we like our spices but me and my son loved it will definitely make again and put this on my favourites thank you for sharing your recipe.

    Delicious! I had to improvise a bit due to being dairy free. I added a can of coconut cream instead of heavy cream, and used dairy free cream cheese. I didn't have any sundried tomatoes nor did I have dairy free cheese, so I just skipped those items and I doubled the amount of chicken broth because I love my soup liquidy. It came out beautifully! My hubby, who loves dairy, said it was amazing. My one year old , who is very picky, ate quite a bit. The peppers give it a sweet great sweet flavor. I will definitely make it again.

    i made this for myself and hubs. he actually loved it! i was surprised because he's normally not that into sun dried tomatoes, but you didn't feel the chewiness of them due to the pressure cooking, so it just added that flavor. it was very good, but it came out way too thick. if i made this recipe again, i'd double the chicken broth to get more liquid and actually make it a soup. it was more like a tomatoey chicken chili with its thickness.

    So absolutely yummy! This is one of my favorite soups to make. I really like the little bit of heat/kick it has, it is not over powering. I do not like spicy food and this was just the right amount of spice.

    This is a great recipe on a chilly night. Great flavor. If you are feeding more than four or want leftovers I suggest doubling the recipe. This is a keeper. 🍲🍲

    Made this and my husband and I loved it!! Very flavorful! The only thing I changed was that I put less heavy cream and just substituted more chicken broth. Too much cream tends to disagree with my stomach. It was still super tasty tans easy to make
