Ingredients list for the Avocado Quinoa Salad

Serves 2:

  • 1 cup cold cooked quinoa
  • 1 avocado, seeded, diced
  • 1 cup cherry or grape tomatoes, halved
  • A few basil leaves, chopped
  • A handful cilantro leaves, chopped
  • 3 to 4 tablespoons finely chopped almonds

The dressing

  • 1/4 cup tablespoon olive oil
  • 1/4 cup lemon juice (about 1 or 2 lemon)
  • 1 tablespoon honey
  • Salt, to taste

Directions

1. Toss quinoa, avocado, cucumber, tomato, basil, cilantro and chopped almonds in a large salad bowl.

2. In a small bowl, add lemon juice, olive oil, honey and salt and mix everything well. Pour over the salad and toss to mix well.

3. Adjust seasoning with salt if needed, and serve chilled or at room temperature.
