Ingredients list for the Melon Agua Fresca
- 5 lbs melon
- 2 cups (500ml) water
- 1 tablespoon honey
- 1 tablespoon lime juice
- Ice, optional for serving
- Lime slices, for garnish
Oven Baked Mashed Potato Cakes
1. Seed the melon and discard the seed pulp. Cut the flesh into 2-inch chunks and discard the rind.
2. Place half the melon flesh in a large blender or food processor with 1 cup water, 1/2 tablespoon honey, and 1/2 tablespoon lime juice. Blend at medium high speed until smooth, then transfer into a large pitcher using a fine mesh strainer to filter out the pulp (this filtering step is optional if you want to keep the pulp). Repeat with the second batch of remaining ingredients. Add lime slices and ice cubes to the pitcher before serving.
Note: The agua fresca will keep in the refrigerator for a couple of days.
