Mandolin is your best friend!
To make thin crispy chips you’ll need the proper tool: a mandolin slicer. Cut slices of apples, beets and Jerusalem artichokes only a few millimeters thick. It takes approximately 2-3 mm. A minimal thickness guarantees an even cooking. Arrange the slices on a rack or on a plate previously covered with baking paper. Season and/or brush with oil if necessary. Then put in your oven. Optimum cooking
Bake your sliced ​​fruits and vegetables in an oven at 250°F (120°C) for 1:30 to 2:00, depending on the quantities. Or opt for a quick-cooking at 360°F (180°C) for 25 minutes. Some cooks regularly open the oven door to allow moisture to escape. Anyway, keep an eye on your chips. Cooking is a delicate stage and the slices can blacken very quickly, especially tomato chips.
