Ingredients list for the Crockpot Salsa Verde Chicken

  • 2 pounds (1kg) bone-in, skin-on chicken thighs (or chicken breasts)
  • 1 tablespoon olive oil
  • 2 bell peppers, sliced (we used green and yellow)
  • 3 cloves garlic, minced
  • 1 cup (250ml) mild salsa verde
  • 1/2 cup (125ml) lime juice
  • 1 1/2 teaspoons chili powder
  • Salt and fresh cracked pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Chopped cilantro, for garnish

Directions

1. To make the crockpot salsa verde chicken: Arrange bell pepper into the bottom of your slow cooker and spread into an even layer. Top with chicken thighs.

2. In a bowl whisk together chili powder, cumin, paprika, salt and pepper. Evenly sprinkle half of the seasoning over chicken thighs then flip chicken and sprinkle in the remainder. Top chicken with garlic.

3. In a small bowl whisk together olive oil, lime juice and add to slow cooker along with chicken and season with additional salt to taste if desired. 

4. Pour the salsa verde over chicken. Cover and cook on HIGH for 3 – 4 hours or LOW for 6 – 8 hours, until chicken has cooked through and veggies are tender.

5. Adjust seasoning, add more lime if you want, and garnish with fresh cilantro. Serve the crockpot salsa verde chicken over rice or in warmed tortillas with sour cream and optional guacamole, cheese and salsa. Enjoy!

Recipe note: For a bit of crispiness, you can carefully transfer cooked chicken to a roasting pan and broil for 2 – 3 minutes, then add chicken back to the slow cooker before serving.

    It’s just kind of a lotta lime juice. Cool if you like citric acid I guess. I don’t think I’d make it again but I’d halve the lime juice and add some kinda hot sauce or something. It’s also a lot of liquid as well. Might be better with some rice.

    I tried this recipe for the first time yesterday. I didn't have any cumin so I substituted creole seasoning. I also doubled the recipe for the seasoning mix. I seasoned the chicken on both sides before putting it in the crockpot. I followed the recipe except I put one layer of chicken in and added the garlic, lime juice mixture and salsa Verde. I also added more seasoning mix after the lime juice since the lime juice washed most of the seasoning off. I repeated the same steps with the second layer of chicken). My family and I loved this recipe and I will definitely make it again!

    I used chicken leg/thigh quarters. I always take the skin off chicken and with this recipe it does not get dry. When they were done on high, I lifted them into a glass dish. I topped with more salsa verde and cumin and put them into the oven to make sure they stayed hot. Just before guests came, I sprinkled cheese and topped pieces with tomato slices. Put a pinch of sweet basil on each tomato, then add more cheese just to make it look nice. Back in the oven at 350 until tomatoes are soft and cheese is melted. Yowzers!
