Ingredients Corrèze Terrine Recipe

for 5-6 people

  • 1 kg pork belly
  • 300 g pork loin
  • 300 g pork liver
  • 1 pork sausage
  • 1 slice of bacon
  • 4 cloves garlic
  • 1 onion
  • 2 coffeespoons of Cognac
  • ½ cup of dry white wine
  • 1 whole egg
  • 1 tbsp of flour

Instructions for Preparing the Correzian Terrine

In a bowl: lay a little bacon fat fee at the bottom.
Line with the sausage: leaving overflowing all around.
Chop meat coarsely.
Chop : the onion and garlic coarsely.
Mix: all ingredients in a bowl.
Add: egg, brandy and white wine.
Stir.
Link :the mixture with the flour.
Put: the mixture into the bowl.
Cover:  with and slice of bacon.
Sprinkle:  with chopped laurel.
Preheat oven: to 180 ° C.
Cook: 1 hour.
Let cool
