Ingredients list for the Cleansing and Detox Broccoli Soup

  • 6 cups water or 4 cups vegetable broth
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 3 celery stalks, diced
  • 3 medium carrots, diced
  • 1 small head of broccoli, broken into florets
  • 1 tablespoon fresh ginger, peeled and minced
  • 1 teaspoon turmeric
  • 1/8 teaspoon cayenne pepper, or to taste (optional)
  • Salt and black pepper, to taste
  • Juice from 1/2 of a small lemon

Directions 

1. In a large pot, add the water or vegetable broth with celery, carrots, broccoli, onion, garlic and fresh ginger and heat to medium-high. Bring to a simmer.

2. Stir in the turmeric, cayenne pepper, plus salt and pepper to taste. Reduce heat and simmer for 10 minutes, or until vegetables are soft and cooked through.

3. Add lemon juice toward the last 2-3 minutes of cooking. Remove vegetables from the pot and transfer to a blender. Adjust consistency with the cooking water or broth. Put back to the pot and reheat quickly. Serve and enjoy!

    This recipe is seriously AMAZING. The only thing I did differently was sauté the onion, garlic, carrots and ginger before putting them into the main pot with water. It came out super yummy and I ate it with one slice of seasonal bread but it was great without as well.
